Because strawberries are low in pectin and we do not use any additives, this jam is very soft. We usually make jam more firm by adding more fresh lemon juice but too much lemon juice will impair the flavour. This means that you will not be able to spread a thick layer of jam on your bread, toast, crumpet, scone or victoria sponge.
The flavour however is unmatched.

Because our jam contains no additives, it is softer than mass produced jam. Put it on a Victoria Sponge, and it soaks in beautifully.
